Sustainable Food Choices in Everyday Life : A Qualitative Study of Consumer Decision-Making (English)

En övergång till mer hållbara kostmönster är central för klimatomställningen, men det råder ofta en diskrepans mellan konsumenters hållbarhetsattityder och deras faktiska köpbeteenden. Syftet med denna studie är att undersöka hushålls livsmedelsval för att identifiera vilka drivkrafter och barriärer som styr vardagskonsumtionen. För att minska risken för överskattning av hållbara intentioner användes metodologisk triangulering bestående av kvittodata, inköpsobservationer och semistrukturerade intervjuer med tio respondenter. Som analytiskt ramverk tillämpades Theory of Planned Behavior (TPB), kompletterat med en abduktiv ansats för att även fånga faktorer utanför teorins ramar. Resultaten bekräftar ett tydligt glapp mellan hållbarhetsvärderingar och faktiska inköp (attitude–behavior gap). Hållbarhet är sällan den primära beslutsfaktorn, utan prioriteras ofta ned till förmån för pris, smak, bekvämlighet och invanda rutiner. Många val tycks ske rutinmässigt genom heuristiska genvägar, där exempelvis svenskt ursprung fungerar som en förenklad markör för både kvalitet och hållbarhet. Studien indikerar att TPB är användbar för att förstå medvetna val och hur pris begränsar handlingsutrymmet, men att modellen i mindre utsträckning fångar rutinbaserade val och butiksmiljöns påverkan.  Studien drar slutsatsen att livsmedelsval är komplexa, socialt situerade praktiker. För att främja hållbar konsumtion räcker det därför inte att enbart försöka förändra individers attityder; det krävs även strukturella åtgärder som gör hållbara alternativ mer ekonomiskt fördelaktiga, praktiska och lättillgängliga. 

Abstract [en]

A transition to more sustainable dietary patterns is considered central to climate change mitigation, but there is often a discrepancy between consumers' sustainability attitudes and their actual purchasing behavior. The purpose of this study is to investigate households' food choices to identify the drivers and barriers that govern everyday consumption. To reduce the risk of overestimating sustainable intentions, methodological triangulation was used, consisting of purchase receipts, in-store observations of respondents purchasing behavior, and semi-structured interviews with ten respondents. The Theory of Planned Behavior (TPB) was applied as the analytical framework, complemented by an abductive approach to also capture factors that fall outside the scope of the theory.  The results confirm a clear gap between sustainability values and actual purchases (attitudebehavior gap). Sustainability is rarely the primary decision factor, and it is often deprioritized in favour of price, taste, convenience, and ingrained routines. Many choices are made automatically through heuristic shortcuts, where, for example, Swedish origin serves as a simplified marker for both quality and sustainability. The study indicates that TPB is useful for understanding conscious choices and how price limits consumers' perceived ability to act but is less capable of capturing routine-based choices and the influence of the store environment.  The study concludes that food choices are complex, socially situated practices. Therefore, to promote sustainable consumption, it is not enough to merely attempt to change individuals' attitudes; structural measures are required to make sustainable alternatives more economically advantageous, practical, and accessible.
